A raclette performance at La Cartonnerie. Recipe sheets from exceptionally talented chefs, raw cow’s milk cheese, installations, good sound, chairs to sit on, culinary design by Julie Rothhahn in collaboration with Cécile Cau, bento boxes to put things in, red wine and sometimes white, hay-smoked potatoes, pickles, DJs who know their music, Japanese raclette, a place that once made cardboard boxes, girls and boys. All in the 11th arrondissement of Paris, over five evenings. Not bad, is it? Time to eat…
